Quick Sea Salted Vanilla Caramel

It’s hard to find someone who will turn down a fresh, soft chewy caramel. My theory is it has something to do with the fact taste buds tend to agree on the pleasing flavor and texture of both butter and sugar. And since caramel is entirely butter, or cream, and sugar, there isn’t much not to love. I love to make caramels and candies; I love the whole process, the candy thermometer, the wrapping and boxing, and giving… But lately I’ve been trying the new 7 minute caramel craze, and I’ve received more rave reviews than ever! I’m always a little apprehensive about using my microwave for some reason, but I served these caramels at my son’s birthday party and they flew off the table!

Quick Salted Vanilla Caramel

These delicious little bite-sized caramels are finished with a dash of sea salt.

1/2 cup butter
1/2 cup light corn syrup
1/2 cup light brown sugar
1/2 cup white sugar
1/2 cup sweetened condensed milk
1 teaspoon vanilla
2 teaspoons coarse or flake salt
  • Preparation Time: 1H
  • Cook Time: 0H10M
  • Yield: 25 large caramels

Instructions: Butter an 8 x 8 inch pan. In a large microwave safe bowl, melt the butter. Stir in the light corn syrup, light brown sugar, white sugar, and sweetened condensed milk, continuing to stir until sugars have dissolved.

Microwave butter and sugar mixture on high for 3 minutes and 20 seconds. Stir bubbling mixture, scraping down the sides, and return to the microwave. Microwave for another 3 minutes and 20 seconds. Stir in the vanilla until well-combined and pour into prepared dish.

In an hour or two, sprinkle salt evenly over caramel. Allow to set a few hours or overnight. Cut caramels to desired shape and size and wrap individually in wax paper.
