Szechuan Beef Stir-Fry

Some weeks, I’m a really ambitious recipe planner with an isle-organized grocery list in one hand and a meal planned for each night of the week in the other. And some weeks I walk into the grocery store and just buy everything I think is pretty. Stir-fry is one of those perfect meals for when I need to use up some of that pretty produce I simply couldn’t pass up! I like to serve this Szechuan Beef Stir-Fry over a bed of brown rice and we have a delicious dinner in no time.

Szechuan Beef Stir-Fry

Stir-fry is a great weeknight meal because it’s quick and easy to adapt to ingredients you have on hand.

Ingredients:
1 pound beef sirloin steak
3 cloves garlic, minced
1/4 teaspoon crushed red pepper
1/4 cup toasted sesame salad dressing
2 tablespoons hoisin sauce
2 tablespoons soy sauce
2 tablespoons cornstarch
2 teaspoons oil
1 cup carrots, julienned
2 stalks celery, thinly sliced
3 green onions, sliced

  • Yield: 4 servings

Instructions: Slice steak into thin strips and place in a medium bowl. Add garlic and crushed pepper.

In a small bowl, combine toasted sesame dressing, hoisin sauce, soy sauce, and cornstarch.

Heat oil in a large skillet or wok over medium-high heat. Add meat and stir-fry for 2 minutes or until meat is barely pink in the center. Transfer meat to a plate and set aside.

Add carrots and celery to the skillet and stir-fry for 2 minutes. Add the meat and dressing mixture to the skillet and stir-fry for 1-2 minutes or until the meat is done and sauce is slightly thickened. Stir in onions.
